Korean popular noodle dish; Japchae

Japchae is a popular dish made from cellophane noodles(bean threads) in Korea. It consists of stir-fried julienned slices of meat and vegetables, including spinach, carrots, and mushrooms, mixed with boiled cellophane noodles and seasoned with soy sauce and sugar.

 

 

 

 

 

[A basic ingredient]

Main ingredients : Beef  7oz, Soaked cellophane noodles  14oz, Shiitake mushroom 4oz,  Red paprika  5oz,  Yellow paprika 5oz, Carrot  4oz, Onion  4oz, Spinach  8oz,

Seasoning ingredients : Soy sauce  5T,  Sugar 2T,  Honey  1T, Rice wine  2T,  Sesame oil  5T, Black pepper  1t, Chopped green onion  3T, Minced garlic  1 1/2T, Ground pine nuts  3T, Salt 2T

 

 

 

 

[ C O O K I N G ]

1. Making a basic seasoning with soy sauce

Soy sauce  5T,  Sugar 2T,  Honey  1T, Rice wine  2T,  Sesame oil  1T, Black pepper  1t, Chopped green onion  3T, Minced garlic  1 1/2T

 

 

 

2. Making stir-fried vegetables using salt

Stir-fly sliced onion add sesame oil 1/2T and salt 1t.  Add Onion cook 1~2 minutes, until softened and Transfer contents of the pan to a bowl and let cool.

 

 

 

Paprika and Carrot cooked the same way. But carrot stir-fly 3~4 minutes. And Transfer contents of the pan to a bowl.

 

 

 

 

 

 

 

3. Making stir-fried ingredients using soy sauce

Blanch the spinach leaves add salt and remove water.

 

 

 

Spinach stir-fry with sesame oil 1/2T and  the solid ingredients of marinade 1/2T.

 

 

 

Shiitake mushroom stir-fry with sesame oil 1/2T and basic seasoning with soy sauce 2T.

 

 

 

Beef stir-fry with sesame oil 1/2T and basic seasoning with soy sauce 3T.

 

 

 

 

4. Making stir-fried cellophane noodles adding the water 2C and  remaining of  basic seasoning with soy sauce.   simmer until cellophane noodles is tender, 7 to 8 minutes. until see a more transparent color.

 

 

 

 

5. Mixing stir-fried ingredients adding the ground pine nuts. According to your liking, you can add sugar and soy sauce.

 

 

 

 

 

 

 

 

 

 

6. Serving food on the plate
